The Louisiana Nursing Home Association (LNHA) invites long-term care professionals interested in becoming certified as dietary and food service managers to attend this five-day workshop on August 19-23, 2024, at the Crowne Plaza in Baton Rouge, LA. On days 1-4 of the workshop, attendees will be trained in various food operations, including food purchasing, preparation, and menu management. The course will also review nutrition principles. The assigned clinical practicums will prepare each participant to document nutrition information, ensure food safety and manage work teams. 


Day four of the workshop, August 22, will conclude with a dietary manager certification exam and on day 5, August 23, the ServSafe training will occur and the ServSafe certification test will be administered. The ServSafe test is required if 1) you have never completed it or 2) your current ServSafe is expired. For attendees who are actively certified, only the first four days of attendance are needed. The course instructors will be Leigh Anne Burns, RDN, LDN, John Hickson, CCA, CDM/CFPP, and Jeff DeMars, LNFA. The deadline to register online is August 12.



After completing the course, participants will be able to:

  • Utilize the systems approach to procure, produce and serve food to all residents
  • Provide a safe and sanitary environment for all employees and residents
  • Exercise fiscal accountability in purchasing
  • Utilize human resource management techniques
  • Provide appropriate quality nutritional care for the residents
  • Meet all state and federal licensing and regulatory agency standards
  • Constantly strive for a person-centered care approach


Hotel Information
Breakfast and lunch will be provided each day. To make a reservation, call the Crowne Plaza at 225.925.2244 and mention that you are attending the course to receive the group rate of $115 for a standard room per night. The deadline to make a hotel reservation and receive the group rate is July 19



Certification Information
This continuing education activity has been submitted and approved for 45 Contact Hours by the Louisiana Certification Registry for Healthcare Ancillary Professionals, Inc. for Certified Dietary and Food Service Managers. Upon successful completion of the course, each participant will be qualified to become a Director of Food & Nutrition Services by standards and regulations enforced by the Louisiana Department of Health, Health Standards Section, and Title 42, Code of Federal Regulations; Part 483; Requirements for States and Long-Term Care Facilities.

LNHA reserves the right to cancel or modify the event due to unforeseen circumstances beyond the control of LNHA, including but not limited to, adverse weather conditions, civil disorder, government regulation or public health emergency. In such case, LNHA would issue a refund of the registration cost. A refund will not be issued for other expenses incurred, such as travel or lodging and LNHA will not be held liable.
